For our unit on fast food at school we watched Supersize Me and made burgers out of beans, bread crumbs, chilis, one egg (for six burgers) and southwestern spices. They had good flavor and (almost) a burger consistency after being dipped in corn meal and sauteed in a small amount of oil. This way we avoided the cholesterol in ground beef using an economical protein substitute.
Ingredients
ReplyDelete1 can (15 ounces) black beans, undrained
1t cumin
1T chili powder
1 green chili, finely chopped
1 cup plain dry bread crumbs
1 egg, beaten
1/4 cup yellow cornmeal
2 T vegetable or olive oil
Top with sliced tomatoes, chopped lettuce, light mayonnaise on whole wheat bun.
Directions:
1. Place beans in food processor. Cover and process until slightly mashed; remove from food processor. Mix beans, chilies, bread crumbs and egg. Shape mixture into 6-8 patties, each about 1/2 inch thick. Coat each patty with cornmeal. Cover and store in refrigerator overnight.
2. Heat oil in skillet over medium heat. Cook patties in oil 5-7 minutes, turning once, until crisp and thoroughly cooked on both sides.
