Earth Day Luncheon

  Great luncheon at school today - prepared and served by my three Culinary Arts classes. Pasta with Spinach Pesto and Blanched Broccoli, Caesar Salad with Homemade Caesar Dressing, Homemade Garlic Bread, Rhubarb-Strawberry Sorbetto, Moca Biscotti, Mint Tea and Sparkling Lemonade. After almost three weeks of preparation it was great to finally serve the lunch to our 300 guests! Almost nothing left at the end of the day - always a good sign, along with the many compliments to our amazing student chefs!

Dunkin’ Donuts Scholarship
Due Date: March 15 or April 15 (depends on location)
Amount: $1,000
Description: Must live near a participating Dunkin' Donuts Franchise.
Recipients selected on the basis of "well-rounded" character: positive
academic record, demonstrated leadership, commitment to school and
community activities, and experience in a work environment.

College Jumpstart Scholarship
Due Date: April 15
Amount: $250 - $1,500 each
Description: The scholarship is open to 10th-12th graders, college
students and non-traditional students. The main requirement is that

getting a higher education. Financial need is not considered.

Society for Foodservice Management Merit Scholarship for High
School Seniors
Due Date: April 15, 2011
Amount: $2,000 each
Description: The Foundation will award a $2,000 scholarship to six
deserving high school seniors who are dedicated to a future career in
on-site foodservice. Students must have a 2.75 cumulative GPA on a
4.0 scale (equivalent to an 82.5 cumulative average). Applicants must
be accepted to culinary school and must submit a letter of
recommendation on letterhead from a current or previous employer.

Western Union Foundation Family Scholarship Program
Due Date: April 21
Amount: Not listed
Description: The Family Scholarship Program is helping
immigrant/migrant fathers and sons, mothers and daughters and
brothers and sisters move up the economic development ladder
through education. Scholarships are used for college tuition, language
acquisition, technical training and GED classes, with two family
members receiving a scholarship to help achieve the type of education
they need in order to create a brighter future for their entire family.
Applicants must have been in the United States for 7 years or less.
Both applicants must have been born outside of the United States.

James Beard Foundation Scholarships

Description: James Beard Foundation offers two types of awards: (1)

Students may apply for up to three (3) Friends of James Beard

The Learning Garden

Our beautiful school garden, where we've harvested lettuce, spinach, parsley, cabbage, scallions and more for our cooking class. The students do an amazing job growing vegetables, flowers, and I think I saw a persimmon tree in there somewhere. Can't wait for the trees to produce fuit that we can use in class too!

Scotch Eggs

Scotch Eggs are usually deep fried, but baking is just as tasty. Spraying with a little Pam before baking makes a nice crisp coating. Using lean ground turkey and spinach also helps to make it healthier. I'm not a big cooked spinach fan, but the texture inside the meat is a perfect addition.

Scotch Eggs with Spinach
Ingredients:
14 oz lean ground turkey
6 hard boiled eggs, shells removed
24 leaves of fresh locally grown spinach
7 T dried breadcrumbs
1 egg, beaten
Directions:
Preheat oven to 375 degrees.
Wrap each egg in 4 leaves of spinach.
Divide sausage into 6 equal portions. On a lightly breadcrumb-sprinkled surface, pat out each portion to about 1/8” thickness. Wrap portions completely around each of the hard boiled eggs, pressing edges together to seal.
 
Dip sausage-coated eggs in beaten egg, then roll in breadcrumbs. Place on baking tray and bake in preheated 375 degree oven until lightly browned, about 25 minutes.

Culinary Competition


Well, the preliminary competition is over. Four CASAA students from the high school competed in C-CAP (Careers through Culinary Arts Program) on 3/31, and now we're waiting for the results to see how they placed and whether they will move on to the final competition. They all did a great job with their knife cuts, omelets and salads!
